The Bean To Bar Experience
Much of the chocolate on the market today is made using couverture which is essentially pre-made chocolate in either buttons or brick form that Chocolatiers then melt down and add flavour inclusions. Chocolate Makers on the other hand take the time to source carefully selected beans then roast, crack, winnow (separate shell from cacao nib) & grind the beans themselves to create unique and distinctive chocolate. By taking the time to do this part of the process, Chocolate Makers are able craft the flavours that are brought out in the chocolate itself and create chocolate of true distinction.
